Cut pork into strips. This is easier to do if you freeze it for 30 mins first.

Heat the oil in a wok or large frying pan. Add the sliced garlic and cook over a medium heat until a nice golden color (only takes a minute or two). Add the pork and stir fry for about 4-5 minutes. Add the onion slices and toss to mix.

Add the fish sauce, sugar and ground black pepper to taste. Toss the mixture over the heat for 3-4 minutes more.

Stir in the red pepper, cucumber, tomatoes (cut into wedges) and scallions. Stir fry 3-4 minutes more, then scoop into a large bowl. You can garnish it with more green onions and serve.
