11. Preheat oven to 350. 2. Spray 13×9 pan with cooking spray. 3. In a very large non-stick skillet sprayed with cooking spray sauté ground beef, onions, peppers and garlic until tender. 4. Add eggplant, tomatoes, breadcrumbs and basil. 5. Bring to a boil stirring as needed. Reduce heat and simmer 10 minutes. 6. Transfer to prepared pan, cover with foil and bake for 45 minutes. 7. Remove cover and sprinkle with the parmesan cheese. 8. Bake 15 minutes or until browned. 9. Let stand 10 minutes before serving.
