1Combine all dry ingredients in a bowl. In other bowl mix eggs, oil, applesauce, vanilla, apple, carrots, and raisins. Mix together. Spray muffins tins with nonstick spray. Fill each cup 3/4 full. Bake 375 for 15-20 minutes.
