Steps
Sequence Step
1Preheat oven to 375. Spray mini muffin pan with bake spray.
2Whisk together eggs, egg whites, apple butter, oil, and vanilla.
3In separate bowl, whisk together flours, sugar, cinnamon, baking powder, baking soda, and salt. Stir in carrots, apples, and raisins.
4Stir wet ingredients into dry ingredients just until combined.
5Spoon batter into prepared pans.
6Mix nuts and wheat germ together and sprinkle on muffin tops.
7Bake 15-20 minutes or until the tops are golden and spring back when lightly pressed.
