| 1 | Add oilve oil to hot pan, then garlic. Sautee for one minute. Cube two slices of bread and toast them in the pan for about 2-3 minutes. This will absorb the garlic and olive oil. Smash with a potato masher until it''s just crumbs. Add a can of tomatoes with all the juices and smash it until it is pesto like. Add cumin and chile powder. When it''s hot, add the beans (chick peas preferred) and spinach and stir until it''s warm. Serve. |
