melt 2 Tbs butter, saute onion, celery, carrot until translucent, add pinch kosher salt, add 3 1/2 cups milk, 3 cans corn, drained,simmer until hot, stirring frequently. Dice and add potatos, bring to boil and turn down heat, simmer 15 min or until potatos are almost fork tender. serve hot, freezes well.
