Steps
Sequence Step
1In a medium bowl, sift or stir together dry ingredients, excluding cranberries, walnuts and coconut.
2In a separate large mixing bowl beat eggs then mix in remaining wet ingredients.
3Mix dry ingredients into wet mixture slowly.
4Once ingredients are blended, stir in cranberries, walnuts and coconut.
5Spoon by small ice cream scoop (about 2 TB) into prepared muffin tins.
6Bake in a preheated 350 degree oven for 10-12 minutes.
