In a medium bowl, sift or stir together dry ingredients, excluding cranberries, walnuts and coconut.

In a separate large mixing bowl beat eggs then mix in remaining wet ingredients.

Mix dry ingredients into wet mixture slowly.

Once ingredients are blended, stir in cranberries, walnuts and coconut.

Spoon by small ice cream scoop (about 2 TB) into prepared muffin tins.

Bake in a preheated 350 degree oven for 10-12 minutes.
