Recipe Description I made these cookies as an experiment trying to make a healthy cookie, with whole wheat and no oil.. they turned out wonderful the whole family loves them. They are a little sticky when done but they taste great.

1Preheat oven to 350 degrees F (175 degrees C). Combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, and salt; set aside.
2In a medium bowl, mix together the 1/2 cup of applesauce and brown sugar. Add pumpkin, egg yolk only (save egg white), and 1 teaspoon vanilla to applesauce mixture, and beat until creamy. Mix in dry ingredients. Beat egg white until stiff and then fold into mixture. Drop on cookie sheet by tablespoonfuls.
3Bake for 15 to 20 minutes in the preheated oven. Cool cookies and enjoy !!
