In a large bowl, combine the dry ingredients. In a small bowl, combine the wet ingredients. Stir the wet ingredients into the dry to make a soft dough. Knead for 3 minutes, then let rest for 5 minutes. Divide into 2-4 loaves. In a large saucepan, bring 8 cups of water or broth to boil with 3 smashed cloves garlic and a quartered onion. Add seitan pieces to broth and let simmer for 1 hour. Don not let the liquid boil.
