1Grind all seeds and walnuts in your food processor (I use a cuisinart) to a fine ground - almost like a butter. Add sugars, 1/4 C coconut butter and 1 whole egg. Blend well. Add berries and blend again until smooth. Combine salt and soda into coconut flour and slowly add to wet mixture. Batter will be very stiff, similiar to "refried beans". Seriously! After beating all the egg whites to form stiff, but still soft peaks, gently fold the whites into the wet mixture. At the same time add small organic blueberries, raisins, cranberries, or anything you choose to add texture and additional flavor. Quantity is at your discretion. Bake in lined muffin tins, 30 mins @ 375 degrees. These are finished when a toothpick comes out clean. These muffins are incredibly moist, flavorful and are super-good for you! GLUTEN-FREE, and GRAIN-FREE, but CONTAINS NUTS.
