In a separate bowl, combine nonfat milk and vinegar then stir to make buttermilk.

Combine egg and buttermilk; add to dry ingredients, stirring until smooth. Stir in banana.

Add additional flour 1 tablespoon at a time till at desired consistency is reached (for thicker pancakes). Spoon 1/4 cup batter for each pancake onto a hot griddle or skillet coated with cooking spray. Turn pancakes when tops are bubbly and edges look cooked.
