Turn crock pot on high. Combine the honey, walnut oil, vanilla extract and cinnamon in the bottom of a crock pot.

Pour in the rolled oats, flax seeds, flaked coconut and almonds.

Cook for an hour, uncovered, stirring every 15 minutes, until toasted color appears.

Turn off crock pot and cool granola.

Add cranberries and store in air-tight container for up to one month.
