in bowl combine first 3 ingredients and egg whites. set aside. In lg. bowel combine dry ingredients. add buttermilk and stir until moistened. gently stir in bananas. Spray 12 2.5 inch muffin pan cups with cooking spray. Fill each cup with an equal amount of batter--about 3/4 full.
Bake for 25 minutes or until muffins are golden brown
