Ingredients you will need:
1 15.5 ounce can of black beans, low sodium, drained and rinsed
3 eggs whites
1 whole egg
1 medium apple, cored and sliced
1/2 cup of cocoa powder
2 teaspoons of vanilla extract
1 1/2 tsp. of baking powder
1/2 tsp. decaff. ground coffee
1/2 cup of sugar or sub with 4 tablespoons of stevia
1/2 bag of extra dark chocolate chips
1 cup of walnuts
Preheat oven to 350 and prepare an 8x8 baking pan with cooking spray. In a food processor place beans, eggs and sliced apples, blend until smooth, them empty into a mixing bowl. Add vanilla, cocoa, sugar, coffee, baking powder, chips and walnuts. Mix by hand with wooden spoon until thoroughly combined, pour into prepared baking pan and bake approximately 30 minutes. Start watching at 20 minute mark as you do not want to overcook. When a knife inserted in the center comes out clean, remove and cool slightly. Enjoy warm with a dollop of nonfat plain greek yogurt...YUMMY!!! Serve these to your family and fri
