Re-heat your leftover rice. I find that about 1 minute with a little water (about a teaspoon) works great. Don''t forget to cover it when you microwave, it keeps it nice and soft.

Scramble your eggs (this recipe is without milk). Cook them the way you enjoy most, but don''t add any butter, margerine or oils (not calculated in nutritional facts).

Plop scrambled eggs on top of heated rice in a bowl. Add a little pepper and a dash of salt. I enjoy this with some sweet chilli sauce on top. Yum Yum!
