Preheat oven to 3750 F,;Lightly coat 12 cup muffin pan with cooking spray.

Stir flour, sugar, baking powder, cinnamon, ginger and salt in a large mixing bowl. Beat egg in a small bowl for 30 seconds, until foamy. Add milk, pumpkin, oil, orange zest. Beat well, and add to flour mixture- stir until moistened.
Fill muffin cups 3/4 full with batter.

. Bake 15 – 17 minutes until tops spring back when touched with a finger.
