Roughly chop 1 cup of the nuts

Use food processor to pulse the other 1.5 cups nuts. Add to the chopped nuts.

Add Raisins

Add coconut.

In a saucepan over medium-low heat, combine oil, honey, vanilla, salt and cinnamon. Cook until the mixture bubbles, then pour over fruit/nut mixture.

Stir to combine completely.

Press the mixture into a parchment lined 8x8 pan, press mixture down HARD.

Cool (or refrigerate) 2 - 3 hours, remove from pan, and cut into 12 bars.
