This is basically the apple pie filling -- without the crust. It uses Splenda rather than sugar.

Heat Oven to 350

Use a small saucepan or a microwave safe container and bring the 3 tablespoons of water to a boil.

Mix together 1 tablespoon of cold water and cornstarch.

Mix the cornstarch mixture into the boiling water. Stir this constantly on low heat for about 2 minutes, then remove from heat.

Add the butter (softened) and the Splenda to the hot mixture.

Add the Cinnamon and the Nutmeg to the mixture

Peel and core the apple, then cut it into bite-sized pieces.

Put the apple pieces into the cornstarch mixture and mix thoroughly.

Spray a small oven-safe dish with cooking spray and then place the apple mixture into the dish.

Cover the dish with aluminum foil and bake for approximately 30 minutes -- just until apples are tender.
