I was thinking about how to use some mandarin oranges when I saw a reference to Thai peanut sauce and decided to combine the two.

curry powder (or 1 tbsp of red curry paste)

cilantro, fresh, chopped

mandarin oranges, canned , drain well

Whisk everything except cilantro and oranges in 2 qt pan. over med-high heat until smooth.

Add oranges and cilantro. Continue to stir occasionally until mixture almost boils. Lower heat and simmer 3-5 min.

Reserved juice or water can be used to thin sauce if it thickens too much.
