Pre-heat oven to 350 F

Lightly oil two cookie sheets

In a large bowl, whisk oil and maple syrup together until viscous

Add eggs and vanilla and beat in thouroughly

Stir in coconut, oats, baking soda, salt, raisins, and currents

Stir in flours until completely mixed, do not overbeat

Drop tablespoons of dough onto sheets, 1.5-2 in apart, flatten slightly if desired

Bake 8-12 minutes until edges and bottoms are brown, and tops are golden and not wet looking

Allow to set 2-3 min on sheets, then remove to wire racks or sheets of parchment to finish cooling
