Dice red onion; Saute in 1 TBLS Oil and 1 TBLS Butter until begins to soften; Add chicken and saute until brown.

In the meantime, rinse and cook Quinoa according to package instructions. Drain and rinse black beans.

Add garlic to chicken and onion mixture; saute one minute.

Add cumin, salt, and pepper to taste. Saute for one minute and then deglaze pan with red wine vinegar.

Add quinoa and black beans, heating through and moistening as necessary with chicken broth.

Add cherry tomatoes (split in half) and combine. Add Feta Cheese and combine. Serve and garnish with pumpkin seeds.
