This is my mom's banana bread recipes. I didn't like how baked in a traditional loaf pan. It was better in the long narrow loaves, but in then portion control is easier in muffin form.
Cream together sugar and shortening until fluffy. Add one egg at a time beating well after each egg. In a separate bowl, sift together flour, salt and baking soda. Fold Bananas and nuts into egg mixture. Gradually beat in flour mixture. Pour into 12 muffin cups and bake at 350 for 22 minutes.
