1In large bowl beat the egg whites and cream of tartar until peaks slightly tilt when beater is slowly withdrawn gradually beat in 1/2 Cup of sugar: continue beating,until whites hold stiff straight peaks when beater is slowly withdrawn. without washing beaters, in Med.Size deep bowl, beat the egg yokes until thickened and leamon colored. Beat in remaining 1-cup sugar a tablespoon at a time, until mixture is thick and ivory colored. Add the zest, lime juice
2And water, beat gently until blended. Gradually beat in flour until blended, Add to egg-whites mixture, folding in just until blended with a rubber spatula. Pour into ungreased 10 inch angel food pan. Bake in pre-heated oven 325 until cake spring back About 1 hour.
