Soak Fiber One in skim milk for 5 minutes. Add mashed, very-ripe bananas and soak for 5 more minutes.

Add sugar and vanilla; stir well.

Lightly beat egg whites and fat-free yogurt (flavored or unflavored). Add to Fiber One - banana mixture.

Add flour; beat or stir well until well-blended

Pour into greased or lined muffin cups (12 regular).
