Prep all veg, keeping all seperate. Chop shallots and parsley. Cut peppers in half lenghtwise and remove ribs and seeds

Saute shallots in butter until light brown. Allow to cool

Add cooled shallots, 3 oz cheese (grated), parsley, and eggs to ground turkey. Mix well.

Make small test patty and cook on stovetop to test and adjust seasoning.

Divide turkey mixture into the 4 pepper halves. Grate remaining 1 oz cheese over top.

Bake in preheated 375F oven 45 minutes.
