Blend together Splenda and applesauce. Heat water in non-stick pan. Add flax seed and stir until slightly thick (egg consistency). Blend flax and pumpkin with Splenda and applesauce.

In separate bowl, sift together all dry ingredients.

Combine wet ingredients, dry ingredients, and water. Mix well.

Pour into two bread loaf pans. Bake at 350 degrees for about 1 hour, or until a toothpick inserted in the middle comes out clean.
