1preheat oven 350 degrees. use non-stick pan and spray butter flavored non stick spray, set aside.
2in a large mixing bowl, blend together coconut oil, vanilla flavoring, espresso grounds, egg whites, and splenda
3blend at low speed until mixture is a thin paste consistency,slowing add in remaining ingredients, incorporating water and coconut water,
4with a rubber spatula evenly spread batter in prepared pan, and put in the oven for 15 mins.
5keep close watch and check center for doneness, once finished cut immeadiately, and let stand for no more than 5 minutes, place, in air tight tupperware, and leave out on countertop for no more than a couple days.
