sprinkle yeast in bowl with warm water, let dissolve and foam up (about 5 minutes)

Once yeast is dissolved, add room temp water

Mix 4 cups of bread flour and salt on low in KA mixer (use "Sitr")

Slowly add the wet ingredients to the dry. Mix till cohesive ball forms, then stop. take off paddle and add dough hook. Knead dough for about 5 minutes still smooth and elastic

form dough into ball, place in well oiled deep bowl and cover with plastic wrap. Let rise, about 1 - 2 hours.
