Pre-heat oven to 325 degrees. Grease a 12-cup muffin pan with cooking spray.

Mix eggs, milk, and pepper.

Blanch spinach in hot water until leaves are soft (2-3 minutes)

Divide ham slices into thirds and place into muffin cups. Turkey, bacon, or cooked sausage can be used instead of ham.

Divide the spinach into the muffin cups.
