Steps
Sequence Step
1Preheat oven to 375 degrees. Lightly coat 2 muffin tins with nonstick cooking spray.
2In a medium bowl, whisk together eggs, egg whites, applesauce and vanilla.
3In a large bowl, stir together the first 9 ingredients. Stir in the applesauce mixture until just moistened. Fold in carrots, apples and cherries.
4In a small bowl combine the toasted wheat germ and flax seeds. You can also add some chopped nuts if desired. Then sprinkle over the muffin tops.
5Bake in preheated oven for 15 to 20 minutes, or until the tops are golden and spring back when lightly pressed.
