Grill or bake chicken until done and juices run clear

Shred or finely cube/chop chicken, place in a bowl to the side

Grab a tortilla, fill it with some cheese, and some chicken

Fold tortilla in half and grill it on a forman grill, sandwich press, or as a last resort, in a pan with some cooking spray to prevent sticking. If you cook it in the pan, make sure to flip it so both sides of the tortilla get nice and golden

Slice quesadilla into 4 pizza type slices and top with some sour cream and salsa.
