water, warm 90 degrees

Place baking stone in oven on lowest level and preheat oven to 475.

Whisk flour, instant yeast and sugar together in small bowl

Whisk in salt

Make a well in the center

Gradually stir flour into water until moistened and dough begins to form

Pour oil into small bowl

Place dough in oiled bowl

Cover tightly

Let sit 1 hour or until doubled

Oil your hands and lift dough out of bowl

Pour a little of left over oil onto the pizza pan

Put dough into pan and press to deflate it.

Press dough into a 10 inch circle

Brush dough with remaining oil

Let sit for 30 min. (skip this step if in a hurry -- turns out as crisper crust)

Set pizza pan (or cookie sheet) directly on stone and bake 5 min.
