Combine wet ingredients in a bowl.

Combine dry ingredients in a separate bowl. Make a well in the centre of the dry mix and add the liquid.

Stir until just incorporated (over mixing will result in flat muffins!).

Fold in the fruit, spoon into muffin cases or silicone muffin pan.

Bake for 20-25 minutes at 180C or until lightly browned and a skewer inserted comes out clean.
