Preheat oven to 350 degrees.

Whisk together flour, oats, baking powder, baking soda, cinnamon, nutmeg, and salt.

In a separate bowl, beat the eggs, then add the sugar, oil, vanilla, applesauce, and mashed bananas to the eggs; mix well.

Combine the wet and dry mixtures. Stir until just combined.

Fold in the zucchini and blueberries.

Pour into 2 lightly greased and floured 9x5 loaf pans

Bake 45-50 minutes until knife inserted at center of loaf comes out clean.

Remove each loaf from pan after they cool. Slice into 10 uniform pieces per pan (20 per recipe).
