Mix dry, add dash of cinnamon and nutmeg depending on your applesauce seasoning (I used homemade that was well-spiced and lightly sweetened). Mix applesauce, vanilla, and oil seperately, then just combine with 2/3 c of roasted chopped pecans. Scoop immediately into muffin cups, sprinkle with blended pecan/raw sugar mixture if desired, and bake at 375 for 22-25 minutes.
