Mix first 7 ingredients together and allow to sit for 15-20 minutes to give the coconut and flaxseed time to absorb some of the water. Shred the apple and when ready to cook add fruit. (Can also use 1 cup blueberries or 1/2 cup raisins instead of the apple.)
Cook as you would normal pancakes. They may take a little bit longer to brown on each side.
