Recipe Description
This sauce is part-way between a marinara and a bolognese, with the pork adding a lot of flavor, but without the mealy consistency of a ground meat sauce. The pasta takes a bit longer, but it is well worth it, compared to store-bought brands

Homemade Pasta with Red Sauce

1 Large onion, chopped

Hunt's Diced Tomatoes with juice

Sautee chopped onion with olive oil in large pot for 5 minutes, or until onion becomes translucent

Remove pork from bone, and cut into 2 in. cubes. Add to sautee mixture.

When pork is browned, add tomatoes, paste, and 4 cups water.

Bring to boil. Add salt, pepper, basil, oregano.

Reduce heat to low, let simmer at least 30 minutes. If simmering more than 1-2 hours, may need to periodically add water.

Measure flour and salt into food processor

Beat eggs and olive oil in bowl

Add egg mixture to food processor while running. Immediately stop after adding.

Add 1-3 tsp water to food processor, running in spurts, until mixture starts sticking to sides.

remove from processor and let rest in a ball for 5-10 minutes.

Roll out and cut into desired width using pasta machine.

Boil in salted water for 1-2 minutes (spaghetti), 3-4 minutes (fetuccine), 5-6 minutes (pappardelle)
