medium (2-1/2" dia)Onion chopped

medium (approx 2-3/4" long, 2-1/2" dia)green pepper, diced

cupsDark Red Kidney beans, canned [two cans, 14.5 oz; includes juice]

Steps
Sequence Step
1Saute in olive oil the Onion, Green Pepper, Celery and Garlic until just soft. Add the ground beef and brown. Drain well.
2Drain and rinse kidney beans. Pour into dutch oven or slow cooker. Add beef and veg mixture. Stir well and turn heat to high.
3Add all remaining ingredients and bring to a boil if using dutch oven. Once boiling, reduce heat to simmer. Cook one hour or until vegetables are soft. Season as needed. If using a slowcooker add all remaining ingredients and set on high. After and hour or so, season as needed and check for ssoftness of the vegetables. When done, turn to low until ready to eat.
