1Heat olive oil in a soup potover medium high heat; saute the leeks until soft. Add the mushrooms, sweet potato cubes, tomatoes with their juice, and sufficient water to make a pleasing thick consistency. Add seasonings,cover, and simmer until the sweet potatoes are nearly soft. Add zucchini and beans. Cover again and continue cooking until zucchini is tender.
