Dice onion, slice celery hearts, slice carrots (if desired). Place in crock pot with broth and chicken breasts. Add salt and pepper to taste. Put on low for 5 - 7 hours. About 15-30 minutes before serving, add herbs, if desired. Super simple recipe, saves well for reheating.
