1Slice carrots into thin slices for ease of eating. Cut bok choy into 1/4 inch slices. Cut chicken into bite size pieces and cook. Combine all ingredients into slow cooker on high for about two hours or when the vegetable is tender. Add spices (cilantro, lemon pepper) to taste.
