1Sift together flour, baking powder, salt, cinnamon and set aside. Combine together soy milk, sugar, vanilla, and apple sauce. Make a well in the flour and add in the wet ingredients while stirring. Leave batter a bit lumpy and fold in the apples, walnuts, and cranberries.
