1Preheat oven to 350. Saute mushrooms and green peppers in olive oil until soft. Grease 9 x 13 pan. Pour mushrooms and peppers into pan. Whisk eggs and cottage cheese together. Pour mixture over veggies. Sprinkle with chives. Bake for 20-25 or until firm and golden.
