Peanut Butter Bananna Soup

1Prepare Mirpoix or Soffrito using 2lb diced onion, 1lb diced carrot, 1lb diced celery sweated in a tablespoon of olive oil for Soffrito or a tablespoon of salt free butter for Mirpoix. Add 8 cups water and cook in pressure cooker at 15lbs for 20 minutes. Puree.
2Slice then caramelize 1lb peeled Banannas with just enough olive oli to prevent sticking to pan. Add 1lb unsalted Peanut Butter and cooked Banannas to Mirpoix and blend. Serve heated with sliced and caramelized Bananna as garnish.
