Cut meat into 1 inch cubes and season with salt and pepper

Brown meat in oil. In small batches if necessary.

Remove meat and drain oil, leave enough oil to coat the bottom of the pan.

Sweat onions until slightly brown, approx 10 minutes.

Add paprika, salt, pepper, thyme, garlic and caraway seeds. Cook for about 1 min.

Deglaze with 2T of Balsamic Vinegar and all the stock.

Season to taste.

Bring to simmer and place in 250 degree oven for about 1 to 2 hours or until meat is tender.
