Beat egg, then mix in the oil and milk.

Stir in cornmeal. Make sure to get out any lumps.

Mix in shredded cheddar cheese.

Use Pam cooking spray to coat the muffin pan. Preheat oven to 400.

Pour mix into 9 muffins cups.
