Rinse bok choy leaves and roots well. Cut the leaves from the root.

Chop root to desired size and place in bowl.

Chop leaves and place in a separate bowl.

Add olive oil to pot and place on medium heat. Add garlic (minced or pressed) and stir.

Add chopped roots to olive oil and garlic. Add salt, ginger and red pepper flakes. Cook until tender. When root is tender, add leaves. Stir, adding additional seasonings to taste.

Turn off heat, stir until leaves are tender. Bok choy is ready to be served.
