Chop all veggies and garlic. Saute celery, onion, garlic and leek in cooking spray. Put cauliflower in stock pot and cover with broth. Boil until soft. Put in food process and process until smoth. Put celery, onion, garlic and leeks in stock pot with remaining veggies and broth and cook until tender. Add to cauliflower and pure in batches in food processor.
