In a large bowl, combine flours, brown sugar, baking powder, baking soda, salt, cinnamon, and wheat germ. In another bowl, beat bananas, egg, oil and applesauce until well blended. Stir into dry ingredients just until moistened. Stir in walnuts.

Coat muffin cups with cooking spray, fill two-thirds full with batter.

Bake at 375 for 18-22 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes befrore removing from pan to a wire rack.
