1Preheat oven to 325. Grease 3 loaf pans.
2Combine baking powder, baking soda, salt, spices, and flour in a large bowl.
3In a separate bowl, whisk together applesauce, pumpkin , vanilla, and eggs.
4Add up to 1/2 cup water if using store bought canned pumpkin. Consistency should be similar to cake batter.
5Combine wet and dry ingredients until moistened.
6Pour into prepared loaf pans. Bake 1 hr 15 minutes. Cool in pans for 10 minutes, then remove to racks to cool completely.
